Cheese is a solid material that is found only in the Moon, high above The Work (Sky). It does not naturally spawn anywhere else, and serves as the Moon's physical structure.
It is relatively easy to destroy, and is one of few solid non-powder materials that can be eaten directly. Apart from the reactions inherited from its tags, Cheese has no alchemical reactions of its own that it is affected by.
